Mille Crepe and Butter Cream Chicken

Since the holiday is still on going, we would like to wish you "Happy Holiday". Spend your holidays wisely people :D Here what i did during this holiday. if you would like to try it, go ahead. worth to try. plus with your families!

Chocolate Mille Crepe with Vanilla Cream

The word mille crepe means "a thousand crepes" and it came from France. the process is similar to the typical crepe except that they're being layered with fillings. In Malaysia, there are two cafes that are famour for its mille crepe; Food Foundry which is in section 17 Petaling Jaya and Nadeje Cafe in Melaka. For those who would like to try at home, here's the recipe:

Chocolate Mille Crepe:

Ingredients:

Crepes

  • 1/4 cup water
  • 3/4 cup cold unsalted butter, cut into tablespoon-sized pieces
  • 8 ounces semisweet chocolate, finely chopped
  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder (or you could use cocoa powder)
  • 2 1/2 cups whole milk at room temperature
  • 6 extra large eggs
  • 1 tablespoon pure vanilla extract

Vanilla cream
  • 200 ml whipping cream 
  • 450 ml fresh milk
  • 2 tablespoon flour
  • 1 1/2 tablespoon cornstarch
  • 85 gm castor sugar
  • 4 egg yolk
  • 2 tablespoon butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
Directions:

For the crepes
1. In a pan, bring the water to boil over medium-high heat. Add the butter one by one, and at the same time whisk the mixture until the butter melt. Remove from the heat, add the chopped chocolate. Stir it completely into smooth mixture. Put aside.

2. In another bowl (A), whisk together the flour, sugar, salt and cocoa powder. In another bowl (B), whisk the milk, eggs and vanilla.

3. Then, pour in bowl (A) into bowl (B). Whisk until smooth. If you find any lumps, discard it by using the fine-mesh sieve. Keep it in air-tight container and store in the refrigerator for a night.

4. After that, heat up the pan. Coat the pan with butter and cook the mixture.

5. Leave the crepes to be cooled.

For the fillings,
1. Boiled up the fresh milk.

2. Remove from the heat. Put in the flour and corn starch. Whisk it well until it become smooth. Remove the lump if you found any.

3. Mix up the egg yolk and vanilla essence and whisk. Then, heat up the mixture until it popped up.

4. Remove from heat. Put in the butter, salt and vanilla essence. Mix it well until it become smooth.

5. In another bowl, beat up well the whipping cream until it become sturdy. 

6. Mix together the custard mixture together with whipping cream.

Lastly, fill the filling at each layer of the crepe. 




you could eat it with chocolate sauce and vanilla ice cream.





Butter Cream Chicken (adapted from Jamiecooksitup.net)

Ingredients:

  • Fried chicken
  • 1 cup of chicken broth
  • 1 cup of milk and 2 tablespoon of milk
  • 1/2 teaspoon of dried herbs
  • 2 tablespoon of cornstrach
  • salt and pepper
Directions:
1. Heat up the pan. Put in the butter with chicken broth. Stir it well.

2. Pour in the 1 cup of milk. Bring it to boil.

3. In another bowl, mix the cornstarch with 2 tablespoon of milk.

4. Pour in the mixture into the boiling mixture.

5. Put in the herbs and pinch of salt and pepper.

6. Pour onto the fried chicken.

This butter cream can also be serve with dory fish or even prawn.

Home Made Food

it has been a while since we last updated this blog. a few things that have been done during the holiday. so here it is.



#1 Pavlova




it's quite tiring baking this. but sweet enough to melt your heart. :)


Recipe

Meringue


  • 4 eggs white
  • 125g castor sugar gula kastor
  • 1/2 teaspoon vanilla essence
  • 1 teaspoon vinegar/lemon
  • 1/2 tablespoon corn flour
Topping
  • 125g whipping cream
  • 125g castor sugar
  • 1/2 teaspoon vanilla essence

#2 Mac 'N' Cheese





supposed to use macaroni, but later i test by using vermicelli.

when you cooked it, make sure the cheese are totally melt.

Bahan perap bt ayam:
Halia+Lada Hitam (Tumbuk)
sos tiram
Kicap
Stok Ayam (Tp Stok Daging lagi best)
Perahan Limau /Lemon
*Kuantiti bahan ikut cita rasa. Campur semua bahan ni n gaul kan dgn ayam n bia jap bg bhn perapan tu meresap n bakar ats non-stick pan. Jangan lupe basahkan ayam dengan minyak sedikit.

Utk Sos:
Bawang Kecil (Tumbuk tp biar kasar)
3SB Sos Tiram
1SB Kicap
1SB Sos Chili /Tomato
1/2 Stok Daging/Ayam
Cendawan Butang (Kalau suka)
1SB Lada Hitam(Tumbuk)
1SB Tepung Gandum
Butter(Mengantikan Minyak)
*Masukkn butter n tumis bawang. Bila dah kekuningan sedikit masukn cendawan jika mahu.
Kemudian masukn kesemua bahan yg disebut. Bancuhkan tepung gandum dgn air supaya tidak berketul
Akhir sekali boleh dihidangkan bersama grilled chicken, kentang lenyek n lain2.

Semester Break.



Salam, lets start this entry with a picture of the man who made it all happened. Bapak Bapak Bapak.

And yeah, this pictures were so long before. When i was having my semester break, last January :) Due to my superlazy to update this blog. I put everything and every foods in the freezer.  :D

We were having lunch at Sedap Corner somewhere in JB. We had the entire noon to find a place to eat. And at last, we went to Plaza Pelangi. Duh.

Some of the dishes i cooked. *peluh.peluh

Hye, it has been such a long time since the previous entry.

as usual i would say , to write about foods need a lot of commitment. which i would say , we should be really passionate on that food. So that, our explanation can be delivered well. However, i am not that good in writing. I don't have a really good vocabs to show how wonderful the taste of the foods.

Therefore , i have to wait for the mood to come. This is not a personal entry which i can blabber about my feelings all day long. It is about food.

Maybe one day, i'll apply to be a host in any food channel? haha. I'm sure i won't be selected. Yeah. first round dah kena kick-out.

By the way , today i'm going to share with you guys - what did i cooked for this entire break.

I just managed to capture some of them. So, enjoy. They may look tasty.


I have to fry the chicken before i cook "Masak Kicap". Bapak prefer it this way. 
Mak taught me to marinate the chicks* with  "serbuk kari" rather than with "kunyit".
It is new thing for me. and it tastes good!

Then only , kita masak kicap. And don't forget to add those "kayu manis and all stuff". Because they make your "masak kicap", smells & tastes even better. and as for me i like everything to be spicy ( a bit ). Therefore adding a chilli is such a good idea. 

Bapak wouldn't like if i add chilli sauce. However, Atok Rob (expert in cooking) said , it would looks better if we put some sauce. It will give us the texture of some thing like "liat,likat,pekat". 

Nasi Goreng / Fried Rice - I made this because we have lots of rice left-over. Not to waste them all.
By the way, even if the rice looks so little in the rice pot it would be no worry , since you can add some fishballs , veggies (long beans and etc) , and whatever you can find in your fridge .

This is so simple. Gunalah perencah Nasi Goreng Adabiiiiii :)


This is Chicken Curry. It may looked pale. Because of the steam. The lens got covered them. So yeah  :) Thumbs up ahh


Not clear because of the steam :) 
I just cooked this for lunch today. I don't know what exactly it is. But it is spicy with some sweetness in it.

Whatever you cook , preserve the authenticity . Try to limit the usage of  "sugar,salt,ajinomoto?"

Random dishes.



Finally i had my own Sambal Udang.

I didnt eat the one in Grand Dinner but i bought this sambal udang at UKC.


This is Buah Markisar that my mom brought from Padang,Indonesia.
Cik Upik gave to her as ole-ole from Padang.

It is sweet.
But the presence of those little2 seeds inside were kinda annoying , since i dont know how to eat it.

Therefore, i took a spoon and start to eat it like a puding instead.

My mum said the biji can be eaten as well.
it is kinda crunchy and a bit bitter.

Mak kata , dalam biji itulah  khasiat dia banyak.

This is my first time eating Markisar.

At last , saya dapat rasa air ini.

It was Okay,i guess.

Sekadar nak lepaskan kempunan je.


My All time favourite.
This is to replace my Grand Dinner.


I cant remember the name.
but it is nice to be eaten when it is HOT!
